A typical polyaspartic product specifies application between 40 and 90 degrees, relative humidity below 75%, and at least 5 degrees above the dew point. That is why install timing gets planned rather than assumed.

Will an epoxy floor yellow?

Epoxy has poor UV resistance and commonly yellows or chalks where sunlight reaches it. That is a chemistry property, not a workmanship question, and it is the main reason a sunlit floor is usually specified with a UV-stable topcoat.
